Enchanting J.C. Le Roux Cap Classique pairings at Taste of Joburg

Whet your palate with enchanting sweet and savoury bites masterly prepared and paired to perfection with elegant J.C. Le Roux Méthode Cap Classique, by seasoned chef Martin Kobald, at the Pick n Pay Taste of Joburg from Thursday, 25 to Sunday, 28 September.

Austrian born Kobald, Honorary President of the South African Chefs Association (SACA), will present three bespoke pairings that will each bring out the unique flavour profile of J.C. Le Roux Cap Classiques, La Vallée, La Vallée Rosé and the refreshing Brut.

Boasting creamy buttery tones, the palate pleasing demi-sec La Vallée will be sheer heaven matched with his vanilla poached pear en croute, described by the chef as “a valley full of fruitfulness as sweet as honey and embraced by pastry.”

For the blushing La Vallée Rosé with its hint of sweetness, he has chosen a rosé duck and pineapple spring roll dusted with a five-spice powder and drizzled with plum sauce. “The Rosé is a perfect partner for this Asian inspired dish. The star anise, cloves, cinnamon, black pepper and fennel seeds in the five-spice adds flavour not just to the plum sauce but also enhances the duck,” Kobald adds.

Make sure that you do not miss out on his “Brut” oxtail pie that is packed with hearty flavours and melds seamlessly with the Brut’s Pinot noir and Chardonnay. As a final touch, he has added a demi-glace rich sauce for this mouth-watering bite.

Each J.C. Le Roux Cap Classique is crafted in the time honoured French tradition whereby the delicate bubbles are created and captured in every bottle during a process of secondary fermentation. South African bubblies made in this way are known as Méthode Cap Classique, as only the French version may be called champagne.

No stranger to the international culinary field, Kobald is currently the Global Chairman for the World Chefs Without Borders organisation, as well as the figurehead for his own personal brand, ChefMLK.

Part of his busy schedule is his role as convenor of the Bidvest World Chefs Tour Against Hunger which together with over 260 chefs from 45 countries, raised over R8 million in aid of feeding over 5 000 children daily for up to five years.
